Sweet and sour Paccheri with radicchio, walnuts, and sainfoin honey
NGREDIENTS for 2 servings:
- 200 gr Paccheri
- 180 gr Treviso radicchio
- Onion to taste
- 4 walnuts
- 2 gr sainfoin honey – Molino and pastificio sul lago
- Grana Padano cheese to taste
- 2 tablespoons extra virgin olive oil
- Course salt
- Table salt
DIRECTIONS:
- Heat a non-stick pan with a drizzle of extra virgin olive oil and the onion, finely chopped. Then add the previously washed and chopped radicchio and the sainfoin honey. Brown for a few seconds over high heat, add 2/3 tablespoons of water, and cook over medium heat until cooked. Turn off the heat, add the chopped walnuts and a pinch of coarse salt. We recommend not letting all the water contained in the radicchio evaporate completely.
- On the side, bring a pot of salted water to a boil, pour the Paccheri in it, and cook for the time shown on the package (in this case 10 minutes).
- Once ready, drain and add them to the pan together with the sauce, turn on at high heat, add a drizzle of extra virgin olive oil, the Grana Padano cheese flakes and, if necessary, a little cooking water from the Paccheri. Sautee everything for a few seconds
- Serve the sweet and sour Paccheri hot.
