I have been selling Pasta Bertoli for a year, after discovering it at a fair. I appreciate the owners’ philosophy and their choice of making a niche product with great raw materials - this is what I want for my shop. Producing and selling fresh pasta, I have high quality standards when it comes to dry pasta and Pasta Bertoli meets them perfectly thanks to its thick drawing - an important feature - and excellent resistance to cooking. My customers also greatly appreciate it and those who have bought it keep on coming back for more.
The land on the La Ghiraia farm is worked using organic farming methods, which are currently awaiting certification.
The company uses crop rotation, alternating wheat with other legumes and cereals.
Only organic fertilizer is used and the green manure practice is used, which is suitable to recreate the tissue of microorganisms that strengthen the seeds’ root system.
Pasta Molino and Pastificio sul Lago make food safety their most important value: the uncontaminated land in Santa Luce guarantees a healthy raw material, which is grown in full respect of the ideals of biodiversity.
The farm is in the process of turning fully organic (by January 2019).
Pasta Molino and Pastificio sul Lago is produced exclusively with grains grown on the farm Azienda Agricola La Ghiraia, and each package includes information for full traceability of the finished product.
The wheat is stowed in a controlled manner and sent to the mill Molino Borgioli, where it is processed without contamination with other grains.
The semolina is then sent to the pasta factory, which guarantees an accurate, controlled, and high-quality processing thanks to its cutting-edge machinery.
